Take the dough and shape it in balls of 1 and a half inches. That is around 1 tablespoon each. Roll the bowl in cinnamon-sugar. Take the dough balls and set them 2 inches apart while using ungreased cookie sheets. You have to bake 2 sheets at once until cookie edges are all set while the center remains soft. This should take around 10 minutes but you have to rotate the sheets. Cookies should be transferred to cooling wire racks. Do this for all the dough balls.

Fruitcake Cookies

This is an intermediate recipe for fruitcake cookies that has a total time of around 14 hours and 50 minutes to make. However, the actual preparation and cooking time is of around 50 minutes. The yield that is offered based on the quantities mentioned above is of around 60 small cookies. You can make them larger if you want.

Ingredients:

• A quarter of a pound of raisings
• Half a pound of dried figs
• 1 tablespoon of honey
• 2 ounces of coarsely chopped dried apricots
• 2 ounces of coarsely chopped candied cherries
• 6 chopped pecan ounces
• 1 tablespoon of lemon juice – freshly squeezed
• 2 tablespoons of dry sherry
• Salt
• Two sticks of room temperature unsalted butter
• Half of cup of sugar – superfine
• Half a teaspoon of ground cloves
• 1 large egg – preferably extra large
• 2 two thirds of all purpose flour cups

How To Prepare:

Take the figs and use scissors in order to snip off hard stems. Smaller knives can also be used. Chopped the figs. Use a medium bowl to combine raisings, figs, apricots, cherries, lemon juice, honey, sherry, salt and pecans. Cover everything with plastic wrap and let everything sit over the night at the room temperature.

Use your electric mixer (paddle attachment) to cream the cloves, butter, sugar and the brown sugar. The mixture should be smooth. Move the level to low speed, add your eggs and then mix until all is stirred properly. Add flour slowly together with a quarter of a teaspoon of salt until the combination is complete. Make sure that you do not over mix. Add your nuts and fruits.

Take your dough and divide it in half. Place every single half on a parchment or utilize waxed paper. Every single half should be rolled into a log and the result should be around 18 inches long. The dough then needs to be refrigerated until all is firm.

In the meantime, preheat your oven up to 350 degrees Fahrenheit. Use a sharp and small knife to cut the logs. The slices should be of around half an inch. Put these slices around half an inch apart and use ungreased sheet pans. The baking time should be of 15 to twenty minutes.
